Finally, two that began the year in the top ten fell out of the set by year’s end and two latecomers made brief appearances at some point, only to disappear later. I wasn’t expecting the pandemic to happen when I began this study, but my takeaway at the end of the test period was that this set of restaurants had done an amazing job adapting.
